Lightening and Pecan Cream Cheese Pancakes

This one is just a general update while I attempt to procrastinate writing a modernism paper.  I have entertained myself immensely by reading Kristin Cashore's blog, which is always a good read, but today was funny because she describes how she hurt herself walking (which I do all the time).  Cashore also mentions her new book - Bitterblue - which I am looking forward to reading- and she mentions her tour dates in the US.  I am incredibly sad that she is only touring the US...though I understand why few writers come to Hong Kong - it is very very very far!  Maybe if the book sells well she will make it to England while I am there this summer - but I doubt it :-(

I  have two fun photos to share as well.

The first is of the pecan cream cheese pancakes I made for breakfast yesterday.  I am on a low-carb diet (sort of) and so I used ground pecans as the flour, cream cheese, eggs, vanilla, and cinnimon to make these pancakes - they turned out very yummy!


The second photo is one of lightening that the hubby took during the stormy days in Hong Kong.  He actually managed to get a couple of great shots of lightening this year (probably because the storm lasted days!) but I am only putting one up here.  He has others on his FB page.


I cannot wait to be finished with this paper - I already have a huge list of books to read that I haven't had time to read during the school year.  The first set is the Hunger Games series, then Bitterblue then the world!
